Thursday

This morning I thought I was going to wake up to a blizzard outside and tons of snow on the ground already.  Well it is 33 degrees and not a snowflake in site.  That is good because my Aunt will have a good drive down without any bad weather!  Also we need to keep Linkin Dry and Warm so tons of snow wouldn't be the best right now!!

Kellen is not very happy this morning, he wants to play with Linkin and I keep yelling at him to leave him alone and making LInkin stay  laying down; this might be a long day!  Kellen takes Linkin's toys from him and runs around the house.  Linkin gets the toy and runs away; then Kellen runs back to him grabs it out of his mouth and says, "drop it, drrooop it."  Kellen throws it across the room and Linkin goes running after it, and they continue to do this most of the day!
Kellen "snuk" around the plant and layed on the bed next to Linkin, trying to get his toy.  They layed there for awhile before Kellen got the toy.

Today I am making a Chicken Tortilla soup, it is healthy and tastes soooo good!


Don't let the long list of ingredients fool you. All you do is dump everything into the slow cooker and walk away.  

Ingredients

    1 pound frozen chicken (shred near end of cooking time)
    1 (15 ounce) can whole peeled tomatoes, mashed
    1 (10 ounce) can enchilada sauce
    1 medium onion, chopped
    1 (4 ounce) can chopped green chile peppers
    2 cloves garlic, minced
    3(14.5 ounce) cans chicken broth
    1 teaspoon cumin
    1 teaspoon salt
    1/4 teaspoon black pepper
    1 (10 ounce) package frozen corn
    1 can black beans, rinse

    Directions

    Place chicken, tomatoes, enchilada sauce, onion, green chiles, and garlic into a slow cooker. Pour in chicken broth, and season with cumin, salt, and pepper. Stir in corn and black beans. Cover and cook on Low setting for 6 to 8 hours or on High setting for 3 to 4 hours. Garnish with crushed tortilla chips, sour cream, shredded cheese, or avocadoes.

    Makes 8 servings.

    Aunt Sue bought Kellen Dairy Queen, he loved it :-)
